In Mexico, saying "Cheers!" can mean many things… but when you have a good mezcal in your hand, you know that what comes next is not just any drink: it is a ritual. And although tequila has its well-earned fame —no one can take that away from it—, mezcal is another story. A deeper, more rustic, braver one. Today we are going to dive into that smoky, strong, and elegant world that mezcal is, and understand why it is not just a drink… it is a way of seeing life.

What makes them different?


Both are born from agave, but tequila can only come from blue agave (Weber), while mezcal can be made from more than 30 varieties. That gives it an impressive richness of flavors, almost like hearing different guitars playing the same song. In addition, the cooking process changes everything:

  • Tequila is cooked in industrial ovens.
  • Mezcal is cooked underground, in conical stone-and-wood ovens, which gives it that smoky and deep flavor.

Espadín

It is the most common, but no less elegant for that. It has herbal notes, a soft smokiness, and balanced sweetness. It is the mezcal that greets you with a firm hand and a steady gaze. Perfect for those who are beginning to explore.

Tobalá

The rebel of the group. Small in size, wild by nature, and difficult to harvest. But its flavor… ah, its flavor! Floral, fruity, complex, and full of nuances. It is like a rustic poem bottled up.

Arroqueño

Imposing. From large agaves that can take up to 20 years to mature. Its flavor is earthy, spiced, dense, and elegant. It is the mezcal for those who have already walked a long road, for those who are not afraid of the strong or the deep.

Mezcal is to be respected. It is sipped slowly, it is smelled, it is savored, it is appreciated. At Valiente Bravo, we believe there is a moment for everything:

  • Neat, in a jícara or veladora glass: it is the pure ritual. Mineral, sweet, earthy, and smoky notes unfold in the mouth. Ideal for accompanying a conversation among the brave, with music in the background and a starry night.
  • In mixology: when mixed with respect, mezcal shines. From a mezcal negroni to a passion fruit cocktail, espadín lends itself to play without losing its identity. But be careful: do not cover it up, highlight it.

The artisanal process: from the field to the heart

This is not a factory-made drink. Mezcal is time, hands, and fire.

  1. Harvest: The agave is harvested when it is ripe. In the case of arroqueño, it can take decades.
  2. Cooking: It is cooked in underground stone ovens, with firewood and hot stones for days.
  3. Milling: It is ground in a tahona (a circular stone pulled by beasts or by hand).
  4. Fermentation: Natural, in open wooden vats, with wild yeasts.
  5. Distillation: In copper or clay stills, in two or more passes, taking care of every drop.

It is a slow, careful, and honest process. Each batch is unique. Every bottle has a story.

Tequila or mezcal? Better, a Valiente.
